The selection

We pay great attention to the selection of green coffee, evaluating the characteristics of the raw material through rigorous checks and tasting tests. Each origin is analyzed to understand its potential, balance, and role within the different blends.


What we look for in every coffee

Aroma, body, balance, intensity, sweetness, persistence, and ability to blend with the other components of the mixture.

The Mixing

The different components are selected and combined to obtain a consistent profile: more intense or softer, more aromatic or fuller-bodied, more suitable for moka pots, capsules, pods, or professional espresso machines.

Slow roasting

At Cellini, we have always adopted a slow roasting process, designed to enhance the characteristics of the beans and best develop the aromatic profile of each blend.

The process takes place through controlled roasting curves, defined according to the characteristics of the coffee and precisely monitored. It is here that the bean changes color, structure, and aroma, progressively transforming into the coffee that will end up in your cup. An balanced result requires time, and for us, time is part of quality.

After roasting, each blend is checked for its roast level and compliance with the standards defined by the quality laboratory.

The color, appearance, and organoleptic profile of the coffee are fundamental elements to ensure consistency over time. Only compliant blends continue in the production process, moving on to the next phase of resting, grinding, or packaging.
